Ingredients
- 2 tablespoons coconut oil, divided
- 2 medium sweet potato or yam, diced into 1/2" cubes
- 1 yellow onion, diced
- 4 nitrite/nitrate free sausages, sliced
- 2 medium bell pepper, diced
- 8 large eggs
- freshly ground black pepper
How To Make fried eggs with sweet potato hash

Step 1In a large skillet, heat 2-4 teaspoons coconut oil over medium heat.

Step 2Add the onions and sweet potatoes, and sauté for 5 minutes.

Step 3Add the sausages and continue to cook until sausages are browned and sweet potatoes are slightly softened.

Step 4Add bell peppers and 1-2 Tbs of water.

Step 5Cover and cook for 15 minutes or until the potatoes are completely soft, stirring frequently.

Step 6Meanwhile, fry eggs in 1-2 teaspoon coconut oil.

Step 7Season with freshly ground black pepper and serve over sweet potato hash.
