coconut oil, divided
2 medium
sweet potato or yam, diced into 1/2" cubes

yellow onion, diced

nitrite/nitrate free sausages, sliced
2 medium
bell pepper, diced
8 large
eggs
freshly ground black pepper

How to Make FRIED EGGS WITH SWEET POTATO HASH

Step-by-Step

  • 1In a large skillet, heat 2-4 teaspoons coconut oil over medium heat.
  • 2Add the onions and sweet potatoes, and sauté for 5 minutes.
  • 3Add the sausages and continue to cook until sausages are browned and sweet potatoes are slightly softened.
  • 4Add bell peppers and 1-2 Tbs of water.
  • 5Cover and cook for 15 minutes or until the potatoes are completely soft, stirring frequently.
  • 6Meanwhile, fry eggs in 1-2 teaspoon coconut oil.
  • 7Season with freshly ground black pepper and serve over sweet potato hash.
