Ingredients

  • 2 large eggs
  • 2 teaspoons fish sauce
  • 1/2 teaspoon white pepper
  • 1 tablespoon olive oil
  • 1 spring onion, white and green parts chopped and separated
  • 2 tablespoons cilantro, minced

How To Make fish sauce omelet

  • Step 1
    Beat the eggs with the fish sauce and white pepper.
  • Step 2
    Add oil to a round skillet and add the white parts of the scallion. Pour in the egg mixture and let the eggs sit for 30 seconds. Then push the egg to the middle and swirl the uncooked egg around the outside of the pan.
  • Step 3
    Sprinkle the green parts of the scallion and the cilantro over top of the omelet and fold the omelet in half. Serve sprinkled with more fish sauce and white pepper to taste
