Ingredients
- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup tomato sauce
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons fresh parsley chopped
- 4 large eggs
- 1/4 cup grated parmesan cheese
How To Make eggs in purgatory

Step 1Pour oil in skillet over medium heat. Saute the onions about 3 minutes. Add the garlic and saute another minute. Stir in the tomato sauce, red pepper flakes, salt and pepper.

Step 2Cook about 5 minutes allowing the sauce to thicken. Push the sauce to the side and break in an egg. Do this for all the eggs. Place a cover over the pan and cook until whites are done.

Step 3Remove cover and sprinkle with parsley and parmesan cheese.
