This is a spicy easy dish that you can have ready in 15 minutes. Great served with sausage or bacon. Great for breakfast, brunch or even dinner.

olive oil
1 small
onion diced
2 clove
garlic minced
1 c
tomato sauce
1/2 tsp
red pepper flakes
1 tsp
1/2 tsp
black pepper
3 Tbsp
fresh parsley chopped
4 large
1/4 c
grated parmesan cheese

How to Make Eggs in Purgatory


  • 1Pour oil in skillet over medium heat. Saute the onions about 3 minutes. Add the garlic and saute another minute. Stir in the tomato sauce, red pepper flakes, salt and pepper.
  • 2Cook about 5 minutes allowing the sauce to thicken. Push the sauce to the side and break in an egg. Do this for all the eggs. Place a cover over the pan and cook until whites are done.
  • 3Remove cover and sprinkle with parsley and parmesan cheese.
