I'm not a big breakfast person, but I love different and peppers for breakfast sounded so different I HAD to try it!

Ingredients

  • 4 - multicolored peppers
  • 4 - eggs
  • 2 tablespoons cream
  • - salt and pepper

How To Make eggs in pepper cups

  • Step 1
    Preheat oven to 350.
  • Step 2
    Slice the tops off peppers and clear out stems and seeds. Level so "cups" sit evenly. Place on baking sheet.
  • Step 3
    Crack an egg into each "cup" and top with a tablespoon of cream. Sprinkle salt and pepper to taste.
  • Step 4
    Bake for about 15 minutes, until yolks are are still a little runny, but whites are set.
  • Step 5
    Sprinkle any herbs you like and serve.
