How to Make Eggs in Pepper Cups
- Preheat oven to 350.
- Slice the tops off peppers and clear out stems and seeds. Level so "cups" sit evenly. Place on baking sheet.
- Crack an egg into each "cup" and top with a tablespoon of cream. Sprinkle salt and pepper to taste.
- Bake for about 15 minutes, until yolks are are still a little runny, but whites are set.
- Sprinkle any herbs you like and serve.
