This is a great breakfast, but it also works good for dinner. We love breakfast for dinner at my house because we are always rushing out the door in the morning headed to work. There's something comforting about having breakfast at night....lets you remember when there was a time that you could actually sit down and enjoy breakfast!

Ingredients
- 6 large baking potatoes
- 1/4 cup butter
- 2 tablespoons butter
- 3 tablespoons sour cream
- 1 tablespoon chives, chopped
- 1 slice bacon, cooked and crumbled
- 2 teaspoons salt
- 1 teaspoon black pepper, freshly ground
- 6 - eggs
- 1 cup cheddar cheese, shredded

Step 1Scrub the potatoes. Prick each with a fork. Bake at 400° for 45 minutes to an hour or until tender. Cool slightly.

Step 2Cut off the top third of each potato; discard or save for another use. Carefully scoop out the potato pulp, leaving 1/8 inch shells. Set the shells aside and mash the pulp with a fork.

Step 3Combine the pulp, butter, and next 5 ingredients in a bowl. Stir well. Spoon evenly into the potato shells. Place the shells on an ungreased baking sheet. Make a deep well in the middle of the mixture in each shell. Break 1 egg into each well; sprinkle evenly with the cheese. Bake at 350° for 20 to 25 minutes until egg is set.
