Our family gets together every year a week or two before Christmas .... I mean the extended families. Everyone ends up spending the night since we all live so far from each other. Everyone is assigned a dish, and this is what my niece Amy brought one year to serve for breakfast. She served this with toast points and a fruit salad.

  • 6 large
    baking potatoes
  • 1/4 c
  • 2 Tbsp
  • 3 Tbsp
    sour cream
  • 1 Tbsp
    chives, chopped
  • 1 slice
    bacon, cooked and crumbled
  • 2 tsp
  • 1 tsp
    black pepper, freshly ground
  • 6
  • 1 c
    cheddar cheese, shredded

How to Make Eggs by Amy


  1. Scrub the potatoes. Prick each with a fork. Bake at 400° for 45 minutes to an hour or until tender. Cool slightly.
  2. Cut off the top third of each potato; discard or save for another use. Carefully scoop out the potato pulp, leaving 1/8 inch shells. Set the shells aside and mash the pulp with a fork.
  3. Combine the pulp, butter, and next 5 ingredients in a bowl. Stir well. Spoon evenly into the potato shells. Place the shells on an ungreased baking sheet. Make a deep well in the middle of the mixture in each shell. Break 1 egg into each well; sprinkle evenly with the cheese. Bake at 350° for 20 to 25 minutes until egg is set.
