Ingredients

  • 4 - english muffin halves
  • 2 tablespoons butter
  • 4 slices ham or canadian bacon or 8 slices bacon, cooked
  • 4 - eggs
  • 2 - egg yolks
  • 2 1/2 - 3 tablespoons lemon juice
  • 1/2 cup cold butter ( do not cut up)
  • 1 - avocado (optional)
  • 2 tablespoons sour cream (optional)

How To Make eggs benedict

  • Step 1
    Butter muffin halves and toast under broiler.
  • Step 2
    Fry ham or bacon.
  • Step 3
    Poach eggs.
  • Step 4
    Put ham or bacon on muffin and top with poached egg.
  • Step 5
    For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.
  • Step 6
    Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.
  • Step 7
    Spoon Hollandaise over each serving
  • Step 8
    For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
