Ingredients
- 4 - english muffin halves
- 2 tablespoons butter
- 4 slices ham or canadian bacon or 8 slices bacon, cooked
- 4 - eggs
- 2 - egg yolks
- 2 1/2 - 3 tablespoons lemon juice
- 1/2 cup cold butter ( do not cut up)
- 1 - avocado (optional)
- 2 tablespoons sour cream (optional)
How To Make eggs benedict

Step 1Butter muffin halves and toast under broiler.

Step 2Fry ham or bacon.

Step 3Poach eggs.

Step 4Put ham or bacon on muffin and top with poached egg.

Step 5For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.

Step 6Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.

Step 7Spoon Hollandaise over each serving

Step 8For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
