english muffin halves
2 Tbsp
4 slice
ham or canadian bacon or 8 slices bacon, cooked
egg yolks
2 1/2 - 3 Tbsp
lemon juice
1/2 c
cold butter ( do not cut up)
avocado (optional)
2 Tbsp
sour cream (optional)

How to Make Eggs Benedict


  • 1Butter muffin halves and toast under broiler.
  • 2Fry ham or bacon.
  • 3Poach eggs.
  • 4Put ham or bacon on muffin and top with poached egg.
  • 5For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.
  • 6Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.
  • 7Spoon Hollandaise over each serving
  • 8For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
