Ingredients

4english muffin halves

2 Tbspbutter

4 sliceham or canadian bacon or 8 slices bacon, cooked

4eggs
-
2egg yolks
-
2 1/2 - 3 Tbsplemon juice

1/2 ccold butter ( do not cut up)

1avocado (optional)

2 Tbspsour cream (optional)
How to Make Eggs Benedict
- Butter muffin halves and toast under broiler.
- Fry ham or bacon.
- Poach eggs.
- Put ham or bacon on muffin and top with poached egg.
- For Hollandiase Sauce. Combine egg yolks and lemon juice in small saucepan. Mix briskly.
- Add cube of butter whole do not cut up. Cook over low heat, stirring constantly until thickened.
- Spoon Hollandaise over each serving
- For an extra treat top each egg with a spoonful of mashed avocado mixed with sour cream.
