eggs anytime

We eat eggs for breakfast but in reality they can be eaten at any meal. We, sometimes, make a simple meal out of eggs, beans & rice with warm tortillas on the side. This is probably considered spanish style since I learned this from my mother in law who is from El Salvador. You might think of eggs with green beans or cauliflower as strange but it really does taste good. Make sure to season with salt & pepper. Ketchup would go well with the potato or cauliflower variation.

Ingredients

  • 3 cups vegetable of choice: potatoes, green beans or cauliflower, cut into bite sized chunks & cooked al dents
  • 1 cup chopped ham or other meat (opt)
  • 1/2 cup small onion, chopped
  • 1/2 cup tomato, chopped
  • 1/2 cup green pepper, chopped (opt)
  • 12 large eggs
  • - salt & pepper to taste

How To Make eggs anytime

  • Step 1
    Saute the green pepper, tomato, and onion in some butter until soft.
  • Step 2
    Add al dente cooked vegetables & optional meat. Cook over medium heat for a few minutes, adding more butter if needed.
  • Step 3
    Add eggs and the salt & pepper to taste.
  • Step 4
    Cook over medium, stirring until eggs are set.
  • Step 5
    Serve with beans, tortillas, salsa, sour cream & anything else you might like to make this a simple meal.
