  • ·
    1 tbsp. vegetable oil (i used olive oil)
  • ·
    1 small clove garlic, inced
  • ·
    1/4 cup chopped onion
  • ·
    1/4 cup chopped green pepper
  • ·
    1/2 tsp. chopped jalapeno pepper, optional
  • ·
    1/4 tsp. salt
  • ·
    1/8 tsp. pepper
  • ·
    1/2 tsp. oregano
  • ·
    1 cup tomato, diced
  • ·
    4 eggland's best eggs

How to Make Eggland's Best Huevos Rancheros


  1. Heat oil in medium skillet and saute garlic, onion and green pepper for 5 minutes. Add jalapeno pepper if using and cook a minute longer. Add the remaining ingredients except for the eggs and simmer, uncovered,for 8 to 10 minute or til tomato softens.
  2. Break eggs into pan in four places. Continue to cook til bottom of egg is set and white is almost cooked, or about 8 minutes. Cover and cook briefly until white is firm and yolk is lightly cooked. Transfer all to serving plate.
