I made this for hubby a couple of weeks ago. He loved it.

Ingredients
- - 1 tbsp. vegetable oil (i used olive oil)
- - 1 small clove garlic, inced
- - 1/4 cup chopped onion
- - 1/4 cup chopped green pepper
- - 1/2 tsp. chopped jalapeno pepper, optional
- - 1/4 tsp. salt
- - 1/8 tsp. pepper
- - 1/2 tsp. oregano
- - 1 cup tomato, diced
- - 4 eggland's best eggs
How To Make eggland's best huevos rancheros

Step 1Heat oil in medium skillet and saute garlic, onion and green pepper for 5 minutes. Add jalapeno pepper if using and cook a minute longer. Add the remaining ingredients except for the eggs and simmer, uncovered,for 8 to 10 minute or til tomato softens.

Step 2Break eggs into pan in four places. Continue to cook til bottom of egg is set and white is almost cooked, or about 8 minutes. Cover and cook briefly until white is firm and yolk is lightly cooked. Transfer all to serving plate.
