Ingredients
- 1 medium tortillas, flour
- 2 or 3 - eggs
- 1 stick green onion, chopped
- - tempura sauce
- - olive oil
How To Make egg tortilla

Step 1In a heavy frying pan, pour just enough olive oil to coat the bottom of the pan.

Step 2Heat the pan just long enough to get the oil hot, then drop the tortilla onto the oil and crack open the eggs on top of the tortilla, sprinkle with the chopped scallions and turn the tortilla once the side facing the oil gets brown and crispy.

Step 3Once the eggs are cooked to your liking (runny or hard), flip the tortilla over onto a plate and sprinkle with tempura sauce (soy sauce may be substituted if you wish).
