This is one of my personal favorites - a BIG hit for family brunches and just as good warmed up the next day. Delicious, super easy and impressive to guests (people will think you've worked all day on this and want the recipe)!

cottage cheese (low fat or fat free works too)
2 c
monterey jack cheese
1/2 c
flour
1 can(s)
diced green ortega chilies (7 oz)
1 tsp
baking powder
1/2 tsp
salt
1/2 c
butter, melted

How to Make Egg Souffle

Step-by-Step

  • 1Preheat oven to 350.
  • 2Mix all ingredients in large bowl until well blended.
  • 3Pour into 13x9x2 ungreased glass pan. Bake at 350 for 30-40 minutes until top is light golden brown.
    Excellent alone or served with your favorite salsa!
