Egg Salad has always been one of my favorites. Here's a recipe that is not only simple, but tasty as well. It can be served by itself or on bread. I choose gluten-free bread or on top of a romaine lettuce leaf.

Ingredients
- 4 - hard boiled eggs
- 1/4 cup mayonnaise
- 1/4 cup celery, chopped
- 1 teaspoon yellow mustard
- - salt, to taste
- - pepper, to taste
- - parsley, dill or green onion, handful
How To Make egg salad

Step 1Boil eggs, let cool, peel and chop. Set aside.

Step 2In a medium bowl, mix together mayonnaise and mustard.

Step 3Add chopped celery and mix well.

Step 4Gently add chopped eggs, salt, pepper and handful of parsley, dill or green onion.

Step 5*Serve on bread, romaine lettuce leaves or by itself. Enjoy!
