Egg Salad has always been one of my favorites. Here's a recipe that is not only simple, but tasty as well. It can be served by itself or on bread. I choose gluten-free bread or on top of a romaine lettuce leaf.

hard boiled eggs
1/4 c
1/4 c
celery, chopped
1 tsp
yellow mustard
salt, to taste
pepper, to taste
parsley, dill or green onion, handful

How to Make Egg Salad


  • 1Boil eggs, let cool, peel and chop. Set aside.
  • 2In a medium bowl, mix together mayonnaise and mustard.
  • 3Add chopped celery and mix well.
  • 4Gently add chopped eggs, salt, pepper and handful of parsley, dill or green onion.
  • 5*Serve on bread, romaine lettuce leaves or by itself. Enjoy!
