egg muffins

These aren't your ordinary muffins! They're made with plenty of eggs, a little milk, cheese, spinach, tomato, basil, (or whatever your liking) & only a little flour, spooned into muffin cups. Mmmmmmmm!

Ingredients

  • 9 large eggs
  • 1/2 cup spinach, fresh, chopped
  • 1/3 cup milk
  • 1/3 cup flour
  • 1/4 cup cheddar cheese, shredded
  • 1 tablespoon basil, fresh, chopped
  • 1 small tomato, chopped
  • 1/2 teaspoon salt & pepper

How To Make egg muffins

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Break the eggs into a bowl & whisk. Add the rest of your ingredients & mix it all together.
  • Step 3
    Add spoonfuls of the mixture to a nonstick muffin tin or a tin sprayed with nonstick coating. I used a 1/4 C measuring cup to transfer the mixture. Pop them in the oven & bake for 25 - 30 minutes, or until done.
  • Step 4
    NOTE: The possibilites are endless! You can also add... Green pepper, Mushrooms, Onions, Bacon, Sausage or whatever else you'd like!
