Egg Bake Your Way

Carol Munoz

So my husband and I are up way too early for work Monday thru Friday (4am), so i had to find a breakfast that was easy and ready to go. I found this recipe and it was a HIT!!! My husband loves these and so do I!!! The best thing is there is such little carbs in this breakfast which is great for both of us. I also only have to make it once a week and we both have breakfast for the whole week we work. It is also a money saver when you are not having to order all the time.

  1. In a medium mixing bowel combine all the eggs, the diced tomatos, peppers, onion, cheese, and spinach. Mix with a fork till all ingredients are well mixed up with the eggs. Take a muffin pan and spray with pam so the eggs do not stick. Scoop about 1/2 cup into each muffin slot till all the mixture is gone.
