At the first bite my eyes closed as I spent a moment in paradise. The creaminess and exquisite taste has me convinced to make this a common event at our house.

Ingredients For easy eggs-down-under

  • 1 Tbsp
    butter
  • 2 Tbsp
    trader joe's unexpected cheddar cheese
  • 2 lg
    eggs
  • 2 pinch
    trader joe's 21 salute seasoning
  • 2 Tbsp
    creme fraiche plus heavy cream mixture
  • 4 Tbsp
    citterio pancetta, diced
  • 4 Tbsp
    fresh, washed & dried spinach, cut into thin strips
  • 10 slice
    heirloom grape tomatoes
  • 2 Tbsp
    additional unexpected cheddar cheese
  • ADD (OR REMOVE) ANY VEGGIE OR MEAT ITEMS TO YOUR LIKING. MUSHROOMS, PEPPERS, ONIONS, BACON, ETC.

How To Make easy eggs-down-under

  • Prepare additional items and set aside.

    Preheat the oven to 350° F. Set a small pot (teapot works well) on to boil. Wash, dry, chop or slice all the additions to your eggs separately and set aside.
  • Coat the baking cups with butter.

    Butter the insides of two souffle cups. In a small bowl, whisk the Creme Fraiche with the heavy cream and set aside.
  • Put grated cheese in the cup and break the egg in with it.

    Sprinkle some of the Unexpected cheddar cheese in the bottom of each cup.
  • Season, we like Trader Joe's 21 Salute Seasoning.

    Begin filling the cups with: 1 egg, sprinkle the seasoning of choice onto each cup.
  • Add the cream mixture.

    Spoon half the cream mixture into each cup.
  • Add, in layers, all the other ingredients of your choice.

    Layer each of the remaining components into each cup keeping each layer separate. Sprinkle the remaining cheese into each cup.
  • Sprinkle with more grated cheese.

    Set both cups into a 7½ X 11 Pyrex baking pan. Carefully pour about 1 inch of water into the bottom of the dish making sure not to get any water into the cups.
  • Place cups in baking pan, add boiling water into the pan, place in oven.

    Set the pan into hot oven and bake for 15-25 minutes, depending if you like your egg yolk soft or hard boiled. (If you use a convection oven the time will be shorter.)
