easy cheesy brunch casserole

I have dreams of someday opening a Bed and Breakfast. I have collected some great breakfast dishes preparing for that someday. Some I have eaten at B&B's around the country. This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

Ingredients

  • 4 slices white sandwich bread
  • 1 medium onion, chopped
  • 1 cup fresh mushrooms, sliced
  • 2 tablespoons butter,unsalted
  • 1 cup cooked ham, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup swiss cheese, shredded
  • 1 tablespoon all purpose flour
  • 1 1/4 cups milk
  • 6 large eggs, beaten
  • 1 tablespoon dry mustard, i prefer coleman's
  • 1/4 teaspoon garlic powder with parsley
  • - parsley for garnish

How To Make easy cheesy brunch casserole

  • Step 1
    Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.
  • Step 2
    Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.
  • Step 3
    Combine cheeses and flour; sprinkle over ham.
  • Step 4
    Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.
  • Step 5
    Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.
  • Step 6
    Let stand for 10 minutes before serving. Garnish with parsley.
