easy cheesy brunch casserole
I have dreams of someday opening a Bed and Breakfast. I have collected some great breakfast dishes preparing for that someday. Some I have eaten at B&B's around the country. This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

Ingredients
- 4 slices white sandwich bread
- 1 medium onion, chopped
- 1 cup fresh mushrooms, sliced
- 2 tablespoons butter,unsalted
- 1 cup cooked ham, chopped
- 1 cup cheddar cheese, shredded
- 1 cup swiss cheese, shredded
- 1 tablespoon all purpose flour
- 1 1/4 cups milk
- 6 large eggs, beaten
- 1 tablespoon dry mustard, i prefer coleman's
- 1/4 teaspoon garlic powder with parsley
- - parsley for garnish
How To Make easy cheesy brunch casserole

Step 1Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.

Step 2Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.

Step 3Combine cheeses and flour; sprinkle over ham.

Step 4Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.

Step 5Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.

Step 6Let stand for 10 minutes before serving. Garnish with parsley.
