easy cheesy bacon, egg & scallion breakfast wrap
This is an easy, warm and filling breakfast for eating at home or on the go. It's my own recipe for a soft flour tortilla filled with two kinds of melted cheese, bacon, scallions and eggs. Delish!

Ingredients
- 1 medium flour tortilla
- 1 slice american cheese
- 2 teaspoons sliced scallions (green onion)
- 1/3 - 1/2 cup shredded sharp cheddar cheese
- 1 - 1 1/2 tablespoons real hickory smoked bacon bits
- 1 teaspoon butter
- 2 - eggs
- 1 pinch salt and/or pepper
How To Make easy cheesy bacon, egg & scallion breakfast wrap

Step 1Place tortilla in medium size skillet.

Step 2Tear American cheese slice into several pieces; distribute pieces over tortilla.

Step 3Scatter sliced scallions, bacon bits and shredded cheddar cheese over tortilla.

Step 4Place the skillet over medium-low to low heat; cover loosely with foil while preparing eggs.

Step 5Immediately melt butter in small nonstick skillet over medium heat.

Step 6Break eggs into a small bowl or cup; add salt and pepper if desired; whisk to combine.

Step 7Pour eggs into skillet with melted butter; cook, stirring occasionally from bottom.

Step 8*Note: The goal for the eggs is to be cooked, but not overcooked, and scrambled but gathered together toward the end to form a cohesive "log" (see photo.) Turn the log over once in skillet to assure all of the egg is cooked.

Step 9Remove foil from skillet with prepared tortilla; place cooked egg "log" in center of tortilla; fold tortilla over egg, burrito style (see photos.)

Step 13Serve immediately or wrap in wax paper for eating on the run.
