I made lots of Easter eggs this year! I was going to make scrambled eggs and they were all hard-boiled, so this was the result!!

Ingredients

  • 2 - hardboiled eggs, sliced
  • 4 slices bread, lightly toasted
  • 2 slices provolone cheese (or any cheese)
  • - all-purpose seasoning (i used chef prudhomme's no salt seasoning
  • - salt to taste
  • - whole grain mustard (optional)
  • - butter/cooking spray or oil for pan

How To Make easter egg sandwich

  • Step 1
    Heat butter, spray or a bit of oil in a cast iron skillet on medium/high. Lightly toast the bread.
  • Step 2
    On one slice of toast, spread mustard (if using), then arrange the sliced egg, sprinkle with seasoning and salt. Cover with cheese. Top with last slice of toast.
  • Step 3
    Place both sandwiches in buttered skillet. Heat for a few minutes until cheese starts to droop, flip sandwiches. Cook until toast is slightly browned.
