easter egg sandwich
I made lots of Easter eggs this year! I was going to make scrambled eggs and they were all hard-boiled, so this was the result!!

Ingredients
- 2 - hardboiled eggs, sliced
- 4 slices bread, lightly toasted
- 2 slices provolone cheese (or any cheese)
- - all-purpose seasoning (i used chef prudhomme's no salt seasoning
- - salt to taste
- - whole grain mustard (optional)
- - butter/cooking spray or oil for pan
How To Make easter egg sandwich

Step 1Heat butter, spray or a bit of oil in a cast iron skillet on medium/high. Lightly toast the bread.

Step 2On one slice of toast, spread mustard (if using), then arrange the sliced egg, sprinkle with seasoning and salt. Cover with cheese. Top with last slice of toast.

Step 3Place both sandwiches in buttered skillet. Heat for a few minutes until cheese starts to droop, flip sandwiches. Cook until toast is slightly browned.
