dirty omelets
I'm not a fan of eggs but since I stopped eating meat,I knew I needed more protein so I've been thinking of ways to eat eggs.I love dirty rice and thought the same vegetables and spices would be good in eggs,so this is my version.You can also make scrambled eggs and stir in the vegetable mixture into the eggs.

Ingredients
- - salt and pepper to taste
- - 1/4 teaspoon each:cayenne,thyme & oregano leaves
- - 2 tablespoons oil
- - 3 c mushrooms
- - 1/4 c each:minced onions,celery & red bell pepper
- - 2 tablespoons butter
- - eggs,beaten
- - 1 c of your favorite cheese
How To Make dirty omelets

Step 1Combine spices,set aside.Heat oil in a skillet, sauté vegetables until tender.Add seasonings.

Step 2In another skillet,over medium-low heat,melt butter,add eggs,when the eggs are set,sprinkle vegetable mixture and cheese over eggs,fold in half,cook just until cheese begins to melt.Remove from skillet .
