My mom always makes this in the dead of winter. It fills you up for the whole day, and with everything in it, even every bite of grits has flavor.

Breakfast bowls are easy and hearty for a cold morning. This twist uses grits instead of hash browns as a base and makes for a delicious meal. The creamy grits with the savory bacon, runny egg, and cheese create a wonderful bite. Serve alone or with buttered toast or a biscuit for dipping.

Ingredients

  • 6 slices bacon
  • 1/2 small red onion, sliced
  • 2 large eggs
  • 2 packages quick-cooking grits
  • - shredded cheddar cheese, to taste

  • Cook the bacon.
