creamed kale and eggs

This is a delicious recipe that really gets you off to a great start for the day. I tried this recipe after I started a high protein/low carb diet. I was leery at first because I've never had kale before, but this is now my FAVORITE breakfast. So yummy and filling!

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons diced onions
  • 2 cups chopped kale
  • dash sea salt
  • 1/4 cup heavy cream
  • 2 - eggs

How To Make creamed kale and eggs

  • Step 1
    Preheat oven to 350 degrees. You will need a small oven-proof skillet.
  • Step 2
    Melt butter in the skillet over med-high heat. Add onions and cook till translucent. Add kale and sea salt. Toss the kale in the butter. Cook for about 4 minutes or till kale is nicely wilted but not browning.
  • Step 3
    Pour in the cream and cook for one minute.
  • Step 4
    Crack eggs and add to the pan putting one on one side and one on the other. Be sure not to stir after you add the eggs
  • Step 5
    Place skillet in the center of the oven for 8 minutes. Enjoy!
