This is a delicious recipe that really gets you off to a great start for the day. I tried this recipe after I started a high protein/low carb diet. I was leery at first because I've never had kale before, but this is now my FAVORITE breakfast. So yummy and filling!

Ingredients

2 Tbsp
butter
2 Tbsp
diced onions
2 c
chopped kale
dash(es)
sea salt
1/4 c
heavy cream
2
eggs

How to Make Creamed Kale and Eggs

Step-by-Step

  • 1Preheat oven to 350 degrees. You will need a small oven-proof skillet.
  • 2Melt butter in the skillet over med-high heat. Add onions and cook till translucent. Add kale and sea salt. Toss the kale in the butter. Cook for about 4 minutes or till kale is nicely wilted but not browning.
  • 3Pour in the cream and cook for one minute.
  • 4Crack eggs and add to the pan putting one on one side and one on the other. Be sure not to stir after you add the eggs
  • 5Place skillet in the center of the oven for 8 minutes. Enjoy!
