The cream cheese adds a bit of a tang and a lot of creaminess to the eggs. A little goes a long way, so don't be tempted to add more cream cheese than indicated, or it will overwhelm. One good addition to these eggs is crumbled bacon.

Ingredients

  • 8 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon pepper (to taste)
  • 1 tablespoon unsalted butter
  • 1 package (3 oz) cream cheese
  • 1/3 cup fresh basil, chopped

How To Make cream cheese & basil scramble

  • Step 1
    In a bowl, whisk together the eggs, milk, salt and pepper.
  • Step 2
    Cut the cream cheese into 1/2 inch cubes. Set aside.
  • Step 3
    Place a large non-stick skillet over medium heat and add butter until melted. Add the eggs and cook without stirring until the bottom begins to set.
  • Step 4
    Distribute the cream cheese cubes evenly over the top of the eggs. Use a large silicone spatula to draw the eggs up from the bottom, forming large curds. Cook until the eggs have thickened but are still moist, but do not stir to break up the large curds.
  • Step 5
    Remove from heat and add the chopped basil. Stir and serve immediately. If not serving immediately, wait to add the basil until right before serving.
