chili cheese omelet
Something simple and quick I make for breakfast when I have leftover chili. (see my recipe box for my chili recipe). Made this for my hubby this morning. Yummy :)

Ingredients
- - 2 eggs
- - dash of milk
- - 1/2 cup leftover chili
- - 1/2 cup mexican shredded cheese blend
- - salt and pepper
- - sour cream
How To Make chili cheese omelet

Step 1Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.

Step 2Add egg mixture to skillet. When egg is fully cooked add chili and cheese. Fold egg over. Cook for a minute until cheese is melted.

Step 3Top with more cheese and sour cream...or whatever you like :)
