Ingredients
- 2 tablespoons olive oil
- 2 large boneless skinless chicken breasts, cut into chunks
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 2 small shallots, minced
- 3 cloves garlic, minced
- 3 large eggs
- 2/3 cup heavy cream
- 1 cup shredded mozzarella cheese
- parsley, for garnish
How To Make chicken and mozzarella frittata

Step 1Preheat oven 350 degrees Place olive oil in the a oven safe skillet. Add the chicken cubes. Season with salt, paprika, oregano and pepper. Cook about 5 minutes. Add the shallots and garlic. Cook until the shallots are tender.

Step 2Whip the eggs with the heavy cream. Pour over the chicken and stir. Top with mozzarella cheese and place in the oven.

Step 3Bake for about 15 minutes, until the eggs are set and the cheese has melted. Garnish with parsley.
