I first cooked this to take to a morning tailgate party. It was a hit with everyone.

Ingredients

  • 1 1/2 cups frozen broccoli, cauliflower and carrot mix
  • 6 - eggs
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon basil, dried
  • 1/8 teaspoon black pepper
  • 1 tablespoon butter or margarine
  • 1/4 cup green onion, sliced
  • 2 ounces mild cheddar cheese, shredded

How To Make cheesy veggie eggs

  • Step 1
    Cook vegetables as directed on package; drain. Keep warm.
  • Step 2
    In medium bowl, combine eggs, milk, salt, basil and pepper; beat well.
  • Step 3
    In medium skillet, over medium-high heat, melt butter or margarine. Add onions; saute for 1-2 minutes or until tender. Reduce heat to low; add egg mixture. Cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan.
  • Step 4
    Stir in warm vegetables; sprinkle with cheese. Cover; cook 2-3 minutes longer or until cheese is melted.
