Ingredients

  • 1 1/2 c
    frozen broccoli, cauliflower and carrot mix
  • 6
    eggs
  • 2 Tbsp
    milk
  • 1/4 tsp
    salt
  • 1/4 tsp
    basil, dried
  • 1/8 tsp
    black pepper
  • 1 Tbsp
    butter or margarine
  • 1/4 c
    green onion, sliced
  • 2 oz
    mild cheddar cheese, shredded

How to Make Cheesy Veggie Eggs

Step-by-Step

  1. Cook vegetables as directed on package; drain. Keep warm.
  2. In medium bowl, combine eggs, milk, salt, basil and pepper; beat well.
  3. In medium skillet, over medium-high heat, melt butter or margarine. Add onions; saute for 1-2 minutes or until tender. Reduce heat to low; add egg mixture. Cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan.
  4. Stir in warm vegetables; sprinkle with cheese. Cover; cook 2-3 minutes longer or until cheese is melted.
