Ingredients
- 1 1/2 cups frozen broccoli, cauliflower and carrot mix
- 6 - eggs
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/4 teaspoon basil, dried
- 1/8 teaspoon black pepper
- 1 tablespoon butter or margarine
- 1/4 cup green onion, sliced
- 2 ounces mild cheddar cheese, shredded
How To Make cheesy veggie eggs

Step 1Cook vegetables as directed on package; drain. Keep warm.

Step 2In medium bowl, combine eggs, milk, salt, basil and pepper; beat well.

Step 3In medium skillet, over medium-high heat, melt butter or margarine. Add onions; saute for 1-2 minutes or until tender. Reduce heat to low; add egg mixture. Cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan.

Step 4Stir in warm vegetables; sprinkle with cheese. Cover; cook 2-3 minutes longer or until cheese is melted.
