Ingredients

  • 1/3 cup flour
  • salt and pepper
  • 1 3/4 cups milk
  • 4 ounces velveeta
  • 6 slices canadian bacon cut into chunks
  • 1/2 cup mayonnaise
  • 1/4 cup each green onions and chopped pimientos drained
  • 8 large eggs
  • 4 english muffins split and toasted
  • parsley for garnish

How To Make cheesy eggs benedict

  • Step 1
    in a saucepan mix the flour with the salt and pepper. Whisk in the milk until the flour is no longer in lumps. Cut the Velveeta into chunks and add to the milk mixture and cook until the cheese is melted.
  • Step 2
    Stir in the bacon, mayo, green onions, and pimientos. Cook until warmed through. Keep warm
  • Step 3
    Poach the eggs in boiling water. Season with salt and pepper
  • Step 4
    Place two English Muffins on a plate. Pour the cheese sauce over the muffins and top with eggs
  • Step 5
    Garnish with parsley
