I came up with this recipe one morning that I just wanted a good eggs benedict but had to use what I had on hand. Try it! It's delicious.

Ingredients

  • 1 slice rye bread the longest piece that will hold two eggs. toasted and buttered.
  • 4 slices deli style cajun turkey lunchmeat
  • 2 large eggs
  • HOLLANDAISE SAUCE
  • 1 large egg yolk only
  • 1 tablespoon water
  • 1/2 tablespoon lemon juice
  • 4 tablespoons butter cut into 4 pieces
  • salt and pepper

How To Make cajun turkey eggs benedict

  • Step 1
    First make the toast and butter it. Set in on a plate. Top with the 4 slices of Cajun Turkey Meat. Set aside.
  • Step 2
    Make the hollandaise. Add the yolk to a small saucepan. add the water and lemon juice and whisk until smooth. No heat yet. Add the butter to the pan and place over medium low heat and cook whisking constantly until the sauce is thicken but not like scrambled eggs. it needs to be smooth. Taste and season with salt and pepper.
  • Step 3
    Break the eggs into separate bowls. Bring a pan of water with a tablespoon of vinegar to a slow boil. While the water simmers add the eggs one at a time. Let the whites of the eggs cook through. Place the toast with the meat in the microwave for just 30 seconds to warm the meat.
  • Step 4
    Top with the poached eggs then season the eggs with salt and pepper. spoon the sauce over top the eggs and put a bit of cracked black pepper on top. Enjoy
