What a cute way to serve an omelet! This is a great, basic recipe for mini crustless quiches. The combination of onion and bell pepper adds tons of flavor. We opted for cube ham and loved the savory contrast. They almost remind us of egg bites you can grab at coffee shops. Great for meal prep, a brunch, or an on-the-go breakfast.

Ingredients

  • 4 - 5 large eggs
  • 1 1/2 cups your choice of meat minced: ham, bacon, sausage, hamburger
  • 1/2 cup chopped onions
  • 1/4 cup diced bell pepper, green and/or red
  • - salt or seasoned salt, to taste
  • pepper to taste
  • 1/2 cup half & half
  • 1/8 cup grated cheddar cheese

How To Make brunch or lunch baby omelet muffins

  • Grab your meat choice and brown in a skillet with onions.
    Step 1
    Brown the meat and onions in a skillet until tender. Drain and set aside until cooled off.
  • Whisk eggs and half and half.
    Step 2
    Whisk eggs until fluffy, adding half & half.
  • Mix all ingredients and chill overnight.
    Step 3
    Mix all other ingredients, except the cheese, and set in the refrigerator overnight (covered).
  • Ladle mixture into a greased cupcake pan while the oven preheats.
    Step 4
    Preheat the oven to 375 degrees F. Use a cupcake baking pan, heavily buttered. Ladle egg mixture into holes and bake.
  • Add a tiny amount of cheese.
    Step 5
    Add a tiny amount of shredded cheddar cheese on top before baking.
  • Bake for 20 minutes.
    Step 6
    Bake at 375 degrees for 20 minutes or until light golden.
