    12 breakfast sausage links
  • ·
    8 to 12 eggs
  • ·
    1 cup sour cream
  • ·
    1/4 cup finely chopped fresh cilantro
  • ·
    2 tbsp. lime juice
  • ·
    1 tbsp. grated lime peel
  • ·
    6 flour tortillas, 6 inches each
  • ·
    2 cups shredded cheddar cheese
  • ·
    2 avocados, peeled and thinly sliced
  • ·
    1 cup salsa
  • ·
    1 cup diced white onions
  • ·
    1 cup diced tomatoes

How to Make Breakfast Tacos


  1. Cook sausages in skillet over medium heat until well done; keep warm. Scramble eggs. Keep warm. In small bowl, mix sour cream, cilantro, lime juice and lime peel. Stir to blend and set aside. To assemble the tacos, put a tortilla on each plate. Top with eggs, sausages and cheese. Add avocado, salsa, onion and tomatoes as desired. Serve sour cream mixture on the side. Makes 6 servings.
