Ingredients
- 4 - flour tortillas
- 2 cups monterey jack cheese, shredded
- 3 - eggs, scrambled
- 1/2 cup sausage, cooked and crumbled
- 1/4 cup green onion, sliced
- 1/4 cup tomato, diced
- - guacamole, optional
- - sour cream, optional
- - salsa, optional
How To Make breakfast quesadillas

Step 1For each quesadilla: Place 2 tortillas in heated 12-inch skillet (or on a griddle).

Step 2Evenly sprinkle cheese over the top of flour tortillas.

Step 3Place scrambled eggs on top of cheese on one tortilla.

Step 4Evenly distribute the cooked, crumbled sausage over the eggs.

Step 5Allow cheese to melt.

Step 6Top with diced tomatoes and green onions.

Step 7Place second flour tortilla with melted cheese on top.

Step 8Remove from skillet; cut into six equal wedges.

Step 9Serve with guacamole, sour cream and salsa.

Step 10Refrigerate leftovers.
