A simple breakfast treat. Feel free to add other ingredients, such as sliced olives.

Ingredients

  • 4 - flour tortillas
  • 2 cups monterey jack cheese, shredded
  • 3 - eggs, scrambled
  • 1/2 cup sausage, cooked and crumbled
  • 1/4 cup green onion, sliced
  • 1/4 cup tomato, diced
  • - guacamole, optional
  • - sour cream, optional
  • - salsa, optional

How To Make breakfast quesadillas

  • Step 1
    For each quesadilla: Place 2 tortillas in heated 12-inch skillet (or on a griddle).
  • Step 2
    Evenly sprinkle cheese over the top of flour tortillas.
  • Step 3
    Place scrambled eggs on top of cheese on one tortilla.
  • Step 4
    Evenly distribute the cooked, crumbled sausage over the eggs.
  • Step 5
    Allow cheese to melt.
  • Step 6
    Top with diced tomatoes and green onions.
  • Step 7
    Place second flour tortilla with melted cheese on top.
  • Step 8
    Remove from skillet; cut into six equal wedges.
  • Step 9
    Serve with guacamole, sour cream and salsa.
  • Step 10
    Refrigerate leftovers.
