breakfast quesadillas, lower in fat

This is a reduced fat version of breakfast quesadillas. I find the fat free cheese unappealing but the reduced fat version seems to be good to me. I like this recipe and hope you will too.

Ingredients For breakfast quesadillas, lower in fat

  • 2
    (6-inch) flour tortillas
  • 1/2 c
    shredded reduced-fat monterey jack cheese
  • 4 slice
    turkey bacon, fried crisp and drained well
  • 2 Tbsp
    fresh salsa
  • fat free sour cream for topping, optional

How To Make breakfast quesadillas, lower in fat

    Heat the broiler; spray a baking sheet with nonstick cooking spray. Place the tortillas on the baking sheet; broil until blistered and softened, about 15 seconds on each side. Sprinkle the cheese over 1 tortilla; top with the bacon and salsa. Top with the remaining tortilla; spray with olive-oil-flavored nonstick cooking spray. Place on the baking sheet and broil until the cheese melts, about 1 minute on each side. Cut into wedges to serve. Makes 2 servings. Weight Watcher's Points: 4 points per serving
