An easy and hearty breakfast treat. Instead of quesadillas, you can also make these into breakfast burritos, but you might need a slightly larger tortilla.

Ingredients For breakfast quesadillas

  • 6
    eggs
  • 2 Tbsp
    onion, minced
  • 2 Tbsp
    green bell pepper, minced
  • 1/4 tsp
    kosher salt
  • 1/4 tsp
    black pepper
  • 1/2 c
    ranch dressing
  • 1/2 c
    salsa
  • 8 oz
    package mexican style shredded cheese blend
  • 4
    flour tortillas, 10 inch
  • 4 slice
    bacon, cooked and crumbled
  • 1/2 c
    diced ham

How To Make breakfast quesadillas

    In a bowl, whisk together the eggs, onions, bell pepper, salt and pepper. In a separate small bowl, stir the ranch dressing and salsa until combined. Set aside.

    Melt the butter in a large non-stick skillet. Add the egg mixture and cook without stirring until the bottom begins to set.

    Draw a rubber spatula through the eggs, creating large curds. Don't break them up. Continue cooking until the eggs have thickened but are still moist.

    Remove the eggs from the skillet and set aside. Wipe the skillet clean with paper towels.

    To assemble the quesadillas, begin by sprinkling 1/4 cup of cheese over half of each tortilla. Top each half with 1/4 of the scrambled eggs, bacon and ham. Fold each tortilla in half and press lightly.

    Heat the wiped-out skillet over medium high heat. Add two quesadillas and cook 2-3 minutes per side, until golden. Repeat with the second batch. Serve with the ranch dressing mix on the side.
