I love making this for breakfast..and the whole family loves it..they even like it for dinner.

I was lazy this mornin and didn't make a crust..I used a store bought roll out crust...we can take a short cut once in awhile , can't we ladies?..Lol!

I made a simple one this morning..eggs, bacon, Monterey Jack cheese and scallions...it's mmm mmm good!

Use whatever topping you have or like...this can be made many, many different ways!..

Ingredients

  • 1 can(s)
    pizza crust, or homemade
  • 6
    eggs
  • 1/4 c
    milk
  • 1/2 lb
    bacon, cooked and crumbled, or whatever meat you like
  • 1/2 c
    ricotta cheese
  • 8 oz
    monterey jack cheese, i grated fresh, use whatever cheese you like..they all are good
  • 2
    scallion, sliced, plus the ends ( optional)
  • ·
    salt and pepper to taste
  • 1/2 tsp
    red pepper flakes ( optional)
  • 1 tsp
    parsley ( optional)

How to Make Breakfast Pizza - Cassie's Way

Step-by-Step

  1. Gather ingredients

    Preheat oven to 425 degree F.

    In a medium skillet, brown your meat; drain set aside to cool; then crumble. I saved some bacon grease to scramble my eggs.
  2. Grease a round pizza pan, or sheet pan. I sprinkle with a little corn meal for crunchiness also.

    Prepare crust, if homemade. If using store bought spread out the dough evenly onto the prepared pan.
  3. In a medium bowl; mix the eggs, seasonings,
    scallions, parsley and milk.
  4. In a medium skillet; soft scramble the eggs, just till set, and holding together. So not to be rubbery after cooking on the pizza. Set aside to cool.
  5. Spread a thin layer of ricotta cheese evenly over the crust. I salt and pepper just to taste, and sprinkled on some hot pepper flakes also, entirely up to you.
  6. Now spread scrambled eggs evenly over the Ricotta cheese.

  7. Next add your meat; then the cheese.

  8. Bake for 20 minutes or till golden brown; or desired crispiness.
  9. Enjoy!
