breakfast on a sheet?

Recipe by

I've actually made breakfast like this for YEARS for my family but I didn't run across any "recipes" for it online until just recently. It's not really a recipe per say, it's just adding a bunch of breakfast foods together on a sheet pan and throwing them in the oven to cook. The convenience is you have everything you need all on one pan: eggs, potatoes, bacon and few seasonings (to add a little bit of flavor)--(if you want to do that but it's not necessary, just depends on how you normally cook your breakfasts) But this is one way I've done mine A LOT for my family.

yield 6 -8 (if everyone only eats 1 egg each and 2 pieces of bacon)
prep time 15 Min
cook time 35 Min
method Bake

Ingredients For breakfast on a sheet?

  • 6 or 8 lg
    eggs
  • 12 slice
    bacon
  • 20 oz
hash brown potatoes (refrigerated, or thawed if previously frozen)
  • 1 1/2 c
    cheddar cheese, shredded
  • parmesan cheese ( you decide how much you want)
  • 2 Tbsp
    butter, melted
  • 1 Tbsp
    olive oil
  • 1/4 tsp
    thyme, dried or fresh
  • a/4 tsp
    basil, dried or fresh
  • 1/4 tsp
    oregano, dried or fresh
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    onion powder
  • 2 Tbsp
fresh chives (only if you want them, i prefer not)
  • salt and pepper to taste

How To Make breakfast on a sheet?

  • 1
Heat your oven to 400 degrees and lightly oil your sheet pan with some olive oil or non stick cooking spray (I usually use 100% Pure Coconut Oil or the spray) A little added **BEAUTY TIP** for the Ladies--Coconut Oil is a wonderful ALL IN ONE wrinkle cream, lotion, moisturizer etc. and a very little goes a LONG way!! (You can use it as all over body lotion, or on your face as a moisturizer and wrinkle cream or use it as a salve for sun burns. I've been using Coconut Oil as a wrinkle cream on my face and turning 50 in July and am always told I look in my 30's! But be careful, you only need a very small amount so you don't end up with oil running down your face...just enough to gently soak into your skin and give it a "healthy sheen" without being SHINY!) Now--back to COOKING!!!!
  • 2
Place the hash browns in a large bowl and gently combine with the butter, oil and all the seasonings you gathered. (gently because you don't want to turn your hash browns into a bowl of mush)
  • 3
After you have combined the hash browns with the seasonings place the hash browns in a single layer on the sheet pan and sprinkle with the Parmesan Cheese all over.
  • 4
Bake the hash browns for 20-25 or until the edges start to brown a little, depending on you oven.
  • 5
Then remove from the oven and create enough "open areas" or "bowls" to put your eggs in but be sure you get don't get any egg shells, they'll be hard to get out and add the bacon slices in various spots all over the top.
  • 6
Sprinkle to entire top with some more Parmesan Cheese if you want or just the eggs and bacon and salt and pepper the eggs to taste.
  • 7
Return to the oven for another 10-12 minutes or until the egg whites have firmed and the bacon is cooked through. (again, this is depending on your oven)
  • 8
The last and final step, once the eggs are set and bacon is cooked through cove the entire top with the shredded cheese and place back in the oven until the cheese is melted across the top, usually about 4-5 minutes or so. (depending on your oven)
  • 9
Once the cheese is melted remove from the oven, serve and ENJOY!!
