breakfast in a loaf

Delicious!! This is one of my favorite things to make for breakfast, or have even made for dinner. Change out what you might like for the meats, and cheeses. I have made many variations. Turkey , sausage, bacon, whatever you prefer. Make sure you get a good crusty bread..

Ingredients

  • 1 - round loaf bread (8 to 9 inch diameter)
  • 4 ounces sliced ham
  • 1/2 - red bell pepper, thinly sliced into rings
  • 1/2 cup shredded monterey jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup pitted, sliced ripe olives
  • 1 large ripe tomato, sliced
  • 8 ounces mushrooms,sliced and cooked
  • 1 small sweet onion, sliced thin
  • 8 - eggs, scrambled with salt and pepper

How To Make breakfast in a loaf

  • Step 1
    Prepare scramble eggs, Remove from heat; cover to keep warm. Saute onion just until clear.
  • Step 2
    Preheat oven to 350 degree. Cut 2-inch slice from top of loaf; set aside for lid. Remove soft interior of loaf, leaving a 1-inch-thick wall and bottom.
  • Step 3
    Place ham on bottom of loaf. Top with bell pepper rings,and onion; sprinkle with half of cheeses. Layer scrambled eggs, olives and tomato over cheeses. Top with remaining cheeses and mushrooms.
  • Step 4
    Place lid on loaf. Wrap in foil. Place on baking sheet. Bake about 30 minutes or until heated through. Cut into 8 wedges. Spread condiments of your choosing.
