I look forward to this just as much as the corned beef and cabbage dinner of the night before.

Ingredients

  • 1/2 cup cooked cabbage, chopped
  • 1/2 cup leftover corned beef, chopped
  • 2 - eggs
  • - salt & pepper to taste
  • 1 tablespoon butter
  • 1 slice irish soda bread

How To Make breakfast for march 18th

  • Step 1
    Melt butter in a skillet and add chopped cabbage. Saute until it begins to carmelize then add corned beef and saute 1 minute more. Beat eggs and add to skillet. Scramble as usual.
  • Step 2
    While eggs are cooking, toast Irish Soda bread.
