breakfast essentials: hash brown pizza
This is one of the recipes that I serve my houseguests during the upcoming holidays… It gets requested quite a bit. It’s simple to make, and you can even prebake the hash brown crusts the day before. Plus you can personalize it using different meats, and even add a few veggies. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE HASH BROWN CRUST
- 8 ounces shredded russet potatoes, or an equivalent of frozen hash browns
- 1 large egg
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- THE TOPPINGS
- 2 large eggs
- 4 ounces breakfast sausage
- 3 ounces cheddar cheese, freshly shredded
- 6 small cherry tomatoes, sliced
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2THE HASH BROWN CRUST

Step 3Gather your ingredients.

Step 4Place a rack in the upper position, and preheat the oven to 400f (205c).

Step 5In a small bowl, whisk the egg, and add a bit of salt and pepper, to taste.

Step 6Add to the hash browns, and toss to combine.

Step 7Shape the hash browns into a disk on a parchment-lined baking sheet.

Step 8Place into the oven and bake until golden brown, about 20 minutes.

Step 9Remove from the oven, and reserve.

Step 10THE TOPPINGS

Step 11Gather your ingredients.

Step 12Add the breakfast sausage to a skillet over medium heat.

Step 13Cook, breaking up with a wooden spoon, until no longer pink.

Step 14Add the eggs into the skillet, and lightly scramble with the sausage

Step 15Add the sausage/egg mixture to the hash brown crust.

Step 16Top with the cheese.

Step 17Add the sliced cherry tomatoes to the top.

Step 18Place in the preheated oven for an additional 5 to 7 minutes, or until the cheese has melted.

Step 19Chef's Tip: If you want the crust to be a bit more crispy, place it on a raised wire rack.

Step 21Cut into wedges, and serve while still nice and warm.

Step 22If you really want to be decadent, serve with some hollandaise sauce. Enjoy.
