first time i made these were when my sister and her family stayed with me for a weekend... my nephew who was bout 10 at the time ate bout 5 of these...they are that good

  • 1 pkg
    with 10, 10 inch flour tortilla
  • 1 lb
    pork sausage
  • 1/2 medium
    green bell pepper
  • 1/2 medium
    red bell pepper
  • 1 medium
    yellow onion
  • 12 large
  • ·
    salt and fresh ground taste
  • ·
  • ·
    sour cream
  • ·



  1. turn oven on to 300. put tortilla in foil... wrap closed well put in oven til all other stuff is ready
  2. put sausage in lg fry pan... cook and stir and break into small pieces as it cooks...while this cooks chop onions an bell peppers into small pieces.. once meat no longer pink add onions and peppers to sausage... cook and stir til onion is limp
  3. while that cooks ... break eggs into lg bowl...whip eggs with wire whisk til frothy add salt and pepper to taste.... now add eggs to pan and scramble eggs cook til eggs are soft set... add some cheese now mix up
  4. now take tortilla out of oven...working with jus one at a time fill with eggs mix add dollop of sour cream and salsa... roll up... i sometimes spice this up with a dash of hot sauce right in with the eggs...but ya don't have too...
