An almost crustless "quiche" style savoury slice packed with grated veggies and a sachet of French onion soup mix for depth of flavour. This is my youngest son's favourite for lunch, breakfast, or a snack.

Ingredients

  • 7 large eggs, whisked in a bowl
  • 3 cups grated veggies; I like zucchini and carrot
  • 1 medium onion, chopped as fine as you can
  • 4 rindless bacon rashers, diced small (uncooked)
  • 1 cup self-raising flour
  • 1 sachet French onion soup mix
  • 1/4 cup oil (I use rice bran)
  • 1 cup grated cheese, cheddar or tasty works well

How To Make betty's french onion savoury slice

  • Step 1
    Preheat oven to 350 F/160 C and grease a 10 x 7 inch tin (30x18 cm lamington style tin).
  • Step 2
Grate the veggies. Add them and everything else into a large bowl. Stir and mix well.
  • Step 3
Pour into the prepared tin and smooth using the back of a spoon or spatula.
  • Step 4
Bake in the oven for 30 - 35 minutes.
  • Step 5
Best eaten after resting for 10 minutes to a couple of hours. Store in the fridge. Individual slices can be wrapped, frozen, and added into a lunch box (what my son does) and will thaw out by lunchtime.
