baking dish quiche

I cut this out of a magazine years ago and forgot all about it until I just came across it. Since I'm having overnight company this weekend, I thought I should post it before I lose it again! NOTE: I will probably be cutting this down by about half and using a 9x13 pan or 9x9 inch pan (so about 5 eggs and everything else also reduced proportionally).

Ingredients For baking dish quiche

  • 2 1/2 c
    flour
  • 2 1/2 tsp
    salt, divided
  • 1 c
    butter
  • 1/4 - 1/3 c
    ice water
  • 6 slice
    bacon
  • 1 lb
    sweet potatoes, chopped (about 2 medium)
  • 1 c
    chopped onion
  • 2 clove
    garlic, minced
  • 6 c
    baby spinach
  • 10
    eggs
  • 2 1/2 c
    milk
  • 1 Tbsp
    chopped mixed herbs
  • 1/4 tsp
    black pepper

How To Make baking dish quiche

    Preheat oven to 375ºF. Grease a 10x15 baking pan. In a food processor, pulse the flour, 2 tsp salt and butter until it resembles crumbs. Add ice water, 1 tablespoon at a time, just until dough starts to come together.

    Transfer dough to prepared pan. Press down firmly and evenly in to the bottom of the pan. Bake 10 minutes.

    Meanwhile, cook bacon until crisp and transfer to paper towels. Save grease. Crumble bacon.

    Add potatoes, onion and garlic to skillet. Cook, stirring for 5-6 minutes until potatoes are tender. Add spinach, stirring until wilted. Spread potato mixture over hot crust.

    In a large bowl, whisk together eggs, milk, pepper, and remaining salt. Stir in herbs and pour mixture over potato mixture. Sprinkle with bacon.

    Bake for 40-45 minutes, until eggs are set. Let stand for about 10 minutes before cutting and serving.

    NOTE: To make the night before, cook as directed, let cool 30 minutes, and refrigerate overnight. The next morning, bake at 375º for 15 minutes.
