This was so easy to make and very tasty. I served this for brunch today. You can vary the ingredients to your liking. This is my version of a baked western omelet.

Ingredients
- 12 - eggs
- 1 cup 2% milk
- 1 cup sharp cheddar cheese
- 1 - package of shredded hash brown potatoes, from the dairy section
- 1 cup chopped onions
- 1 cup chopped green pepper
- 1 cup diced ham
- - salt & pepper to taste
- 1 teaspoon dried dill weed
How To Make baked western omelet

Step 1Break eggs into a large bowl and lightly beat, add milk and beat again.

Step 2Saute onions and green pepper in olive oil until tender.

Step 3Add hash browns, ham, onions, peppers, cheese, salt, pepper and dill weed.

Step 4Mix all ingredients together and pour into a prepared 9x13 casserole dish. Bake at 350 degrees for 30 to 35 minutes or until a knife comes out clean when put into the center of the dish. If it starts to brown before it is done, cover lightly with foil.
