Baked Egg Muffins

6 slicebacon - cooked and crumbled
1 1/2 Tbspbutter, melted
1 1/2 Tbspmaple syrup -optional
6 slicebread, crust removed
·salt and pepper to your liking
6 Tbspheavy cream (i use evporated milk or half & half)
6 Tbspshredded cheddar cheese (or what you like)
How to Make Baked Egg Muffins
- Prepare bacon, drain, crumble and set aside.
- Preheat oven to 325. Grease muffin cups.
Combine the melted butter and syrup in a small bowl.
Remove crust from bread, and flatten with a rolling pin. Brush bread with the butter mixture. Line muffin cups with the flat bread.
- Bake in a preheated oven until the bread is crisp,about 4-5 minutes. Sprinkle crumbled bacon into each cup. Scramble 1 egg with salt, pepper, cheese and the cream. Bake until whites are set about 11-14 minutes, or until they are cooked to your liking.
