You can use bacon, ham, sausage, etc. for the meat. You can also add any spices you like, and the type of cheese you like. I use a deep muffin tin. Some people don't like the syrup, and some do. I do 3 of each.

bacon - cooked and crumbled
1 1/2 Tbsp
butter, melted
1 1/2 Tbsp
maple syrup -optional

bread, crust removed
salt and pepper to your liking
6 Tbsp
heavy cream (i use evporated milk or half & half)
6 Tbsp
shredded cheddar cheese (or what you like)

How to Make Baked Egg Muffins


  • 1Prepare bacon, drain, crumble and set aside.
  • 2Preheat oven to 325. Grease muffin cups.
    Combine the melted butter and syrup in a small bowl.

    Remove crust from bread, and flatten with a rolling pin. Brush bread with the butter mixture. Line muffin cups with the flat bread.
  • 3Bake in a preheated oven until the bread is crisp,about 4-5 minutes. Sprinkle crumbled bacon into each cup. Scramble 1 egg with salt, pepper, cheese and the cream. Bake until whites are set about 11-14 minutes, or until they are cooked to your liking.
