Bacon & Potato Frittata
Ingredients

3 Tbspbutter or margarine

2 cfrozen o'brien hash brown potatoes with onions and peppers

5 largeeggs
-
1/2 cbacon(crisp cooked and crumbled)

1/4 chalf and half or milk (can use fat free half & half)

1/8 tspsalt

1/8 tsppepper
How to Make Bacon & Potato Frittata
- Preheat broiler
- melt butter in large ovenproof skillet over medium-high heat.
Swirl butter up side of pan to prevent eggs from sticking.
Add potatoes; cook 4 minutes,stirring occasionally. - Beat eggs in a medium bowl.
Add bacon,half and half,salt and pepper;mix well.
Pour egg mixture into skillet;reduce heat to medium.
Cover and cook 6 minutes or until eggs are set at edges(top will be wet) - Transfer skillet to broiler.
Broil 4" from heat 1-2 minutes or until golden brown and center is set.
Cut into wedges.
