- 3 tablespoons butter or margarine
- 2 cups frozen o'brien hash brown potatoes with onions and peppers
- 5 large eggs
- 1/2 cup bacon(crisp cooked and crumbled)
- 1/4 cup half and half or milk (can use fat free half & half)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper

Step 1Preheat broiler

Step 2melt butter in large ovenproof skillet over medium-high heat. Swirl butter up side of pan to prevent eggs from sticking. Add potatoes; cook 4 minutes,stirring occasionally.

Step 3Beat eggs in a medium bowl. Add bacon,half and half,salt and pepper;mix well. Pour egg mixture into skillet;reduce heat to medium. Cover and cook 6 minutes or until eggs are set at edges(top will be wet)

Step 4Transfer skillet to broiler. Broil 4" from heat 1-2 minutes or until golden brown and center is set. Cut into wedges.
