bacon 'n egg cups
I was wandering around on the internet a while back and saw this picture. It didn't have a recipe with it but it looked easy enough so I decided to give it a try. It is so simple and easy. It also makes a great breakfast buffet item. After a little more research, I see that this dish has been around a long time, with many of the including bread in the bottom of the muffin tin. At the time I tried it, I didn't think of that but it turned out delicious anyway.

How To Make bacon 'n egg cups
-
Step 1Partially fry the bacon. Cook it about half of the way you like it but leave it pliable so it can be molded into the muffin tin. (Remember, it will continue to cook in the oven.)
-
Step 2Lightly spray each cup of the muffin tin with the cooking spray. Line each cup with a piece of the partially fried bacon.
-
Step 3Crack an egg into each bacon-lined muffin cup.
-
Step 4Cook in a 400F oven until desired doneness.
-
Step 5These are great served on an english muffin, a piece of your favorite toasted bread or even on a "bed" of hashbrown potatoes...use your imagination.
