bacon-mushroom quiche
Quiche is considered a French dish, however egg custards in pastry were known in English cuisine at least as early as the 14th century!

Ingredients
- 1 - pie pastry
- 8 slices bacon
- 1 small onion, grated
- 4 ounces fresh mushrooms
- 4 - eggs, beaten
- 1 1/2 cups shredded cheddar
- dash pepper
- 2 tablespoons flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- dash red pepper
How To Make bacon-mushroom quiche

Step 1Preheat oven to 375

Step 2Cook and crumble bacon.

Step 3Saute onion and mushrooms in a small amount of bacon drippings until soft. (Onions aren't pictured because I was making it for someone who doesn't eat them)

Step 4Toss cheese with flour.

Step 5Slightly beat eggs. Add Milk, salt, pepper and red pepper to eggs. Fold in bacon and onion into egg mixture, then cheese and mushrooms.

Step 6Pour into unbaked pie shell. Place pie tin on a cookie sheet and bake at 375 for 35-40 minutes.

Step 7Let stand for 10 minutes before serving.
