bacon egg bake

This is a great morning or brunch dish. Kinda like a quiche, but without the crust. This is for a basic idea, so you can add ham or green pepper, or onions would be great as well as spices like basil or parsley. I did not add them to this recipe because I tend to change it whenever I make them, depending on what I have. Use what you have, this is great for leftovers.

Ingredients

  • 6 - eggs
  • 1/2 package bacon, cooked and crumbled
  • 2 cups hash browns, lightly browned
  • 1 tablespoon cream cheese, softened
  • 1 1/2 cups cheddar cheese, shredded
  • 2 tablespoons milk
  • - salt and pepper
  • - non-stick spray

How To Make bacon egg bake

  • Step 1
    Mix the eggs, milk and cream fheese until well blended. Salt and pepper to taste. Next mis in half the cheddar cheese and set aside.
  • Step 2
    Spread the hash browns along the bottom of a 8x8 pan that is sprayed. Layer the bacon over the hash browns, then pour the egg mixture over the bacon and top with remaining cheese and bake at 350°for 45 min or until golden.
