bacon, cheese and chive omelette
This delicious breakfast or brunch entrée is as easy, and almost as quick to prepare, as "plain Jane" scrambled eggs, and has so much more flavor! I say, treat yourself to something special. There's no reason for breakfast to be boring when it's this easy to take it to the next level!

Ingredients
- 1 teaspoon butter
- 2 large eggs
- 1 large pinch of fine sea salt
- 2 teaspoons chopped fresh chives, divided
- 1 1/2-2 ounces whole milk mozzarella, sliced or shredded
- 1- 1 1/2 tablespoons real hickory smoked bacon bits
How To Make bacon, cheese and chive omelette

Step 1Break raw eggs into a small bowl; add salt; beat with fork or small whisk until yolks and whites are well homogenized; add 1/2 of the chives; mix well.

Step 2Melt butter in a small nonstick skillet over medium heat.

Step 3Pour eggs into skillet; cook over medium heat until eggs are almost set, but remain glossy and slightly loose on surface.

Step 4Place cheese slices on egg and sprinkle with 1/2 of the bacon bits.

Step 5Using an egg turner or spatula, fold omelette in half or into thirds; remove from heat.

Step 6Slide omelette onto serving plate; sprinkle with remaining bacon bits and chives.

Step 7Serve immediately or keep warm until served.
