bacon and egg cups

To save time,look for mixed diced bell pepper in the produce section of the grocery store. I think you could make and bake these the night before and just pop in microwave in the morning. (I HAVE NEVER DONE IT THOUGH)

Ingredients

  • 12 slices bacon,crisp cooked and cut crosswise into thirds
  • 6 large eggs
  • 1/2 cup diced bell pepper
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup half and half
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

How To Make bacon and egg cups

  • Step 1
    Preheat oven to 350 F. Lightly spray 12 standard(2 1/2")muffin cups with nonstick cooking spray.
  • Step 2
    Place 3 bacon slices in each prepared muffin cup,overlapping in bottom.
  • Step 3
    Beat eggs,bell pepper,cheese,half & half,salt and pepper in medium bowl until well blended. Fill each muffin cup with 1/4 cup egg mixture.
  • Step 4
    Bake 20-25 minutes or until eggs are set in center. Run knife around edge of each cup before removing from pan.
