avocado toast with fried egg
I love avocados and breakfast. Ripe olives and tomatoes add a little taste boost. I used large, elongated slices rye bread and was able to fit two eggs on one slice of toast for fewer carbs.

Ingredients
- 4 slices hearty whole grain or rye bread
- 4 - eggs
- 1 - avocado
- - lemon juice
- 1/4 cup sliced ripe olives
- 2 tablespoons minced sun-dried tomato, packed in oil; or chopped roasted red pepper
- - smoked paprika
- - salt, pepper, garlic granules
How To Make avocado toast with fried egg

Step 1Mash avocado in small bowl, sprinkle with lemon juice.

Step 2Toast bread.

Step 3Spread each piece with mashed avocado. Add salt, pepper and garlic granules to taste.

Step 4Fry eggs to your preference (I like them over easy, but sunny side up eggs make a better presentation).

Step 5When eggs are done, slide each one on top of an avocado toast. Sprinkle sliced olives, chopped tomatoes, paprika, extra salt and pepper to taste on each egg to serve.
