Ingredients

  • 6 large eggs
  • salt and pepper
  • 1/4 cup chopped scallions
  • 1/4 cup diced tomatoes
  • 8 sticks bread
  • 4 slices Swiss cheese
  • 4 tablespoons Kewpie mayonnaise
  • 4 large lettuce leaves
  • 1 large avocado, sliced

How To Make avocado egg sandwich

  • Step 1
    Beat the eggs with salt and pepper. Spray a large skillet.
  • Step 2
    Pour the eggs in and cook until the bottom is set. Fold it and cook for 1 minute. Fold again and cook until there are no runny spots. Cut into 4 pieces.
  • Step 3
    Toast the bread.
  • Step 4
    Add the Kewpie Mayo then the Lettuce, tomato, and scallion. Place the cheese on the bottom and place the hot eggs on top. Add the avocado slices on top of the eggs and put the sandwich together.
