Ingredients

  • 6 tablespoons egg substitute
  • 2 teaspoons minced fresh dill or parsley
  • 1/8 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 1 teaspoon extra-vigin olive oil
  • 4 - asparagus spears, trimmed and cut into 1/2-inch pieces
  • 2 tablespoons minced shallot
  • 1 tablespoon fat-free sour cream
  • 1 teaspoon black caviar

How To Make asparagus fritata with caviar

  • Step 1
    Mix egg substitute, dill, salt, and cayenne in small bowl.
  • Step 2
    Heat oil in 8-inch nonstick skillet over medium heat. Add asparagus and shallot; cook, stirring often, until vegetables are softened, 3 minutes. Add egg mixture. Reduce heat to low and cook, covered, until bottom of frittata is firm, 5-6 minutes. Top with sour cream and caviar.
